THE DOMAINE & THE STORY
Defaix Frères is a family-run domaine in France’s celebrated Burgundy region. The domaine was established in 1955, and today Hélène and Didier are the fourth generation to grow grapes and the second generation to craft estate-bottled wines, producing their first vintage in 2004. The family has a long, rich history in Burgundy and to uphold this profound legacy, they strive to craft remarkable wines worthy of the Defaix family name. While mostly famous for their Chablis holdings, they also own 14.7 acres of vineyards in the Côte Chalonnaise (3.7 acres of Rully Villages and 11 acres of Rully Premier Cru) boasting a castle that has been in the same family for six centuries.

Manual harvest and sorting.
Soft and slow pressing to extract the best juices.
Vinification: Slow alcoholic fermentation at 20°C on fine lees with natural yeasts in used oak barrels. Moderate batonnage.
Maturation: ageing in used oak barrels for 18 months.

TASTING NOTES
This wine has aromas of stone fruit, tropical fruit and orchard fruit. Hints of spice and oak aging slowly reveal themselves deeper in the bouquet. On the palate the wine also shows mineral notes and a great structure. Fruity and serious all at the same time this wine delivers in spades.
