THE DOMAINE & THE STORY

Defaix Frères is a family-run domaine in France’s celebrated Burgundy region. The domaine was established in 1955, and today Hélène and Didier are the fourth generation to grow grapes and the second generation to craft estate-bottled wines, producing their first vintage in 2004. The family has a long, rich history in Burgundy and to uphold this profound legacy, they strive to craft remarkable wines worthy of the Defaix family name. The domaine cultivates 66 acres in the Chablis AOC, including four Premier Cru climats, one contracted Premier Cru, one Grand Cru climat, and two contracted Grands Crus. Additionally, it sources grapes from the nearby commune of Auxerre.

TECHNICAL INFORMATION
100 % Chardonnay
Soil : upper Jurassic Kimmeridgean on hillsides facing South-East.
Yield : 45 hl/ha
Vinification & maturation : soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees with natural yeasts. Fermentation and ageing for 20% in used oak barrels and 80% in stainless steel tanks. Ageing on fine lees for 12 months with batonnage.

TASTING NOTES
This is more floral than some other 1er Cru Chablis, with citrus, stone fruit, white rose petal and spices. A light sheen to the texture. Delicate, pure, and threaded wine, with a hint of salinity and minerality on the finish.
