THE DOMAINE & THE STORY

Defaix Frères is a family-run domaine in France’s celebrated Burgundy region. The domaine was established in 1955, and today Hélène and Didier are the fourth generation to grow grapes and the second generation to craft estate-bottled wines, producing their first vintage in 2004. The family has a long, rich history in Burgundy and to uphold this profound legacy, they strive to craft remarkable wines worthy of the Defaix family name. The domaine cultivates 66 acres in the Chablis AOC, including four Premier Cru climats, one contracted Premier Cru, one Grand Cru climat, and two contracted Grands Crus. Additionally, it sources grapes from the nearby commune of Auxerre.

Soil : Chalk and clay
Yield : 60hl/ha
Vinification and maturation: Fermentation in stainless steel tanks and aged on fine lees for 8 months. Lees are regularly moved around during the first months to enrich the structure.
